I Said Ricotta Bitch!!
1 bunch basil leaves– chopped
1 Tbsp black pepper
2 cups Ricotta cheese
1 cup olive oil
2 cups Parmigiano Reggiano cheese – grated
½ cup dry white wine
In your blender, combine the basil leaves, black pepper and Ricotta
cheese. Blend on “Low” for 1 minute and then blend in the olive oil. Blend on “Medium”
until the dressing is creamy. Add in the Parmigiano Reggiano cheese and dry
white wine. Blend the dressing on "High" until it is creamy. Chill the dressing for 20
minutes before serving it over a salad or hot bread!
