1 saucepan
2 cups extra virgin olive oil
2 cups spinach – chopped
2 Tbsp black pepper
½ cup bay leaves - chopped
2 cups kale – chopped
1 cup yellow squash – shredded
1 tsp sea salt
1 large bowl
1 bag salad mix
2 cups vinaigrette salad dressing
White wine
In a saucepan over “Medium” heat, combine extra
virgin olive oil and spinach. Sauté the spinach for 2 minutes. Next, blend
black pepper, bay leaves, kale and yellow squash into the spinach. Sauté the
mixture for 5 minutes – stirring continuously. Lastly, blend a teaspoon of sea
salt into the sautéed mixture. Continue cooking the mixture for an additional minute
and then turn off the heat. In a large bowl, combine salad mix and vinaigrette
salad dressing. Toss the mixture thoroughly and then blend the spinach/kale
mixture into the salad mix. Enjoy this hot salad along with several glasses of
white wine.
