Luke's Layered Salmon 3.3

cups salad mix

cup arugula - chopped

oranges – peeled and sliced
Preheat
your oven to 400 degrees F and then spray a layer of cooking spray
onto a large baking dish. Next, place 3 pounds of salmon evenly in the
baking dish and then pour 2 cups of cold water over the fish. Sit the baking dish to the side. In a large pot, combine orange
juice, black pepper and lemon juice. Stir the ingredients thoroughly
and then pour the mixture over the fish. Bake the salmon until the
fish starts to flake – about 20 minutes. While the salmon is
baking, place 2 cups of salad mix onto a large platter and then place
1 cup of arugula on top of the salad mix. Lastly, arrange orange
slices evenly on top of the greens. Once the salmon is done, place
the fish on top of the greens and serve this dish with your favorite
white wine.
