Pesto, Pesto and Mix

2 cups arugula – chopped
2 cups lettuce – chopped
1 cup lemon juice – fresh
1 cup olive oil
1 cup Parmesan cheese
1 tsp garlic salt
2 cups pine nuts – chopped
1 tsp sea salt
1 Tbsp black pepper
1 large plastic container with a lid

In a food processor or blender, combine arugula, lettuce, lemon juice and olive oil. Blend on “Low” for 1 minute. Next, blend Parmesan cheese, garlic salt, pine nuts, sea salt and black pepper into the mixture. Blend on “Low” until the pesto is well blended. Transfer the pesto into a large plastic container, cover the container with a lid and chill the mixture for 2 hours before using.
