Nick's Chip Pizza

1 large pizza pan Cooking spray 1 large pizza crust – homemade or commercial 2 cups pizza sauce – homemade or commercial 2 cups potato chips – plain 2 cups shredded cheese 2 cups BBQ potato chips 2 cups pizza sauce 2 cups pepperoni 2 cups spicy potato chips 3 cups shredded cheese 2 cups black olives 1 cup jalapeno peppers 1 case favorite beer
To start, preheat your oven to 375 degrees F and then spray a large pizza pan with a thin layer of cooking spray. First, place a large homemade or commercial pizza crust in the center of the pan and then layer pizza sauce, potato chips and shredded cheese on top of the crust. Next, layer BBQ potato chips, pizza sauce, pepperoni and then spicy potato chips onto the crust. Lastly, layer shredded cheese, black olives and jalapeno peppers onto the crust. Bake the pizza for 15 minutes or until the pizza's is golden brown. Enjoy this big pizza with your favorite beer. 


The Cocktail to Start the Weekend

2 cups cherries – washed and halved ½ cup cherry liqueur 2 cups white wine – dry 1 Tbsp white sugar 3 ice cubes Tall glasses
In a blender, combine cherries, cherry liqueur and dry white wine. Blend the ingredients on “Low” for 1 minute and then blend white sugar and ice cubes into the cocktail. Blend on “Medium” until the ice is completely crushed. Serve this cocktail in tall glasses and enjoy!!

I Work Better Meals

6 cans dark beer 4 lb steak – beef with bone removed 2 Tbsp black pepper 1 Tbsp sea salt 1 large baking dish 2 cups white onions – chopped 2 cups green bell peppers – chopped 1 large platter ½ lb butter 2 bottles California Cabernet – chilled
To start, combine 3 cans dark beer, 4 pounds of beef steak, black pepper and sea salt in a large baking dish. Place the baking dish in your refrigerator for 24 hours and let the meat soak in the beer. After the soaking process is complete, remove the dish from your refrigerator and let the dish come to room temperature. Next, preheat your oven to 350 degrees F and then add 3 cans of dark beer, 2 cups of chopped white onions and 2 cups of chopped green bell peppers to the dish. Stir the ingredients gently and then place the baking dish in your oven. Let the meat cook for 2 hours or until the meat contains a lite pink center – you may have to add beer or water to the dish if the beer cooks out. 2 Weeks of Joy Salsa

1 large pot 8 tomatoes – chopped and juices kept 1 cup vinegar 1 cup lime juice 1 cup lemon juice 4 cups green chile peppers – chopped 1 cup red chile peppers - chopped 1 cup corn – frozen 2 cups yellow onions – chopped 1 cup red onion – chopped 11 tsp rosemary 1 Tbsp black pepper 1 Tbsp sea salt 1 Tbsp cayenne pepper Mason jars
In a large pot over “Medium” heat, combine tomatoes, vinegar, lime juice and lemon juice. Stir the ingredients until it starts to boil and then blend green chile peppers, red chile peppers and frozen corn into the mixture. Next, let the salsa cook for 15 minutes and then blend yellow onions, red onions, rosemary, black pepper and sea salt into the mixture. Stir the ingredients every 5 minutes until the onions are soft. Lastly, blend cayenne pepper into the salsa and let the mixture come to a full boil and then turn off the heat. Let the salsa cool for 20 minutes and then pour any excess liquid from the salsa. Once the salsa is cool, transfer the mixture into Mason jars.


Summer Fig Joy

Cooking spray 1 small baking dish 12 figs – fresh and chopped 1 cup brown sugar 1 cup brown whiskey ½ cup unsweetened chocolate 1 can biscuits – at least 5
To start, preheat your oven to 350 degrees F and then spray a thin coat of cooking spray onto a small baking dish. Next, combine fresh figs, brown sugar and whiskey in the dish. Stir the mixture slowly for 1 minute and then blend ½ cup of unsweetened chocolate into the mixture. Lastly, cover the dish with 5 homemade or prepared biscuits. Bake the dish until the biscuits are golden brown – about 12 minutes. Enjoy this summer dish for breakfast or anytime you want!!

Leave It to Salmon Meal

1 large bowl 4 cups salmon – chopped 1 cup olive oil 1 Tbsp dry white wine 1 cup spicy mustard 1 Tbsp black pepper 1 tsp sea salt ½ cup dill – fresh and chopped ½ cup cooked cabbage – chopped 2 pieces garlic bread – buttered and hot
In a large bowl, combine chopped salmon, olive oil, dry white wine and spicy mustard. Stir the ingredients thoroughly and then blend black pepper, sea salt and dill into the salmon mixture. Lastly, blend chopped cabbage into the mixture and then spread the salmon dish onto 2 pieces of buttered garlic bread. Enjoy!!!

Luke's Passionate Pizza Night

1 large prepared pizza crust - precooked 1 large pizza pan 2 cups chocolate spread – soften 3 cups strawberries – chopped 3 cups pineapple – chopped 2 cups coconut Whipped cream Wine
To start, place a large prepared pizza crust, precooked in the your oven according to the directions on the package, in the center of a large pizza pan. Next, spread 2 cups of soften chocolate spread on the crust and then layer chopped strawberries and pineapple on the crust. Lastly, top the pizza with 2 cups of coconut and whipped cream. Chill the pizza for 30 minutes and then enjoy this treat with your lover!! Also, serve this pizza with lots and lots of wine!!

Let's Pretend It is Wednesday Dish

1 skillet 2 lbs bacon – regular or maple flavored Large bowl 6 large eggs 4 cups Monterey Jack cheese 2 cups onions – chopped 2 cups green chili peppers – chopped 2 cups tomatoes – chopped ½ cup poppy seeds Toast Coffee
In a skillet over “Medium” heat, fry 2 pounds of bacon and then drain any excess grease from the bacon. Next, in a large bowl, combine 6 large eggs, 4 cups of Monterey Jack cheese, 2 cups of onions and 2 cups of green chili peppers. Stir the ingredients thoroughly and then blend the mixture into the fried bacon. The bacon will crumble and that is OK. Saute the mixture until the ingredients are well blended. Lastly, blend 2 cups of tomatoes and ½ cup of poppy seeds into the mixture. Cook the mixture until the tomatoes are tender. Serve this big dish with toast and coffee.




A Little Pot of Tomatoes in the Oven

2 garlic cloves – chopped 2 Tbsp black pepper 1 tsp sea salt 6 large tomatoes – diced 1 large bowl 3 Tbsp parsley – chopped 1 cup olive oil 4 cups bread crumbs Cooking spray 2 large muffin pans
To start, preheat your oven to 350 degrees F. Next, combine garlic cloves, black pepper, sea salt, and diced tomatoes in a large bowl. Stir the mixture gently and then blend parsley, olive oil and bread combs into the mixture. Stir the ingredients until well blended. Lastly, spray a thin layer of cooking spray onto 2 large muffin pans and then pour the tomato mixture into the pans. Bake the dish for 15 minutes or until the bread crumbs are golden brown. Enjoy!!

1 large bowl 3 cups watermelon – chilled and cubed 1 cup Tequila – chilled 1 cup lime – chopped
In a large bowl, place 3 cups of watermelon and then slowly pour 1 cup of Tequila over the watermelon. Next, top the watermelon with 1 cup of chopped lime. Chill the dish for 30 minutes and then enjoy the fruit while sitting outside.



The Onion Mixture to End All Mixtures!!

1 skillet 1 cup butter 2 cups onions – chopped 2 cups mushrooms – sliced 1 Tbsp black pepper 1 tsp cayenne pepper
In a skillet over “High” heat, melt 1 cup of butter and then blend 2 cups of chopped onions into the melted butter. Next, blend 2 cups of sliced mushrooms into the onion mixture. Saute the ingredients until the onions are soft and the mushrooms are slightly brown. Lastly, blend 1 tablespoon of black pepper and 1 teaspoon of cayenne pepper into the mixture. Stir the ingredients until well blended. Use this onion/mushroom mixture over meats, fish and chicken.

Nick's Saturday the 14th Chicken

1 skillet 1 cup olive oil 3 lbs chicken breast – cubed 2 Tbsp black pepper ½ cup Tequila ½ cup limes – chopped 1 Tbsp rosemary 1 bowl 1 large bag potato chips 1 large platter 1 small bowl 1 cup salsa – medium or hot Favorite beer
In a skillet over “High” heat, pour in 1 cup of olive oil and let the oil heat until it starts popping. Once the oil starts popping, reduce the heat to “Medium” and saute 3 pounds of cubed chicken breast. Saute the chicken until it is golden brown. Next, leave the heat on and drain any excess grease from the chicken breast. Lastly, combine black pepper, Tequila, chopped limes and rosemary in a bowl. Stir the ingredients thoroughly and then pour the mixture over the chicken breast. Let the dish come to a boil and then turn off the heat. To prepare the dish for serving, arrange 1 large bag of potato chips onto a large platter and then pour the chicken breast dish over the chips. This dish is great with a side of salsa served in a small bowl and lots of beer!

Provolone Rolling and Provolone Baking

Cooking spray 1 large baking dish 2 lbs ground beef or chuck 2 Tbsp black pepper 1 Tbsp sea salt 2 cups soy sauce 1 large bowl Cutting board 2 lbs Provolone cheese – sliced 2 lbs cooked ham – sliced 2 lbs red onions – sliced 2 or 3 bottles red wine
To start, preheat your oven to 350 degrees F and then apply a thin layer of cooking spray to a large baking dish. Next, combine ground beef or chuck, black pepper, sea salt and soy sauce in a large bowl and then use your hands to blend the ingredients together. Work the mixture until the soy sauce is fully mixed into the ground beef or chuck. Place the meat mixture onto a cutting board and then flatten the mixture with your hands. Lastly, place 2 pounds of sliced Provolone cheese on top of the meat mixture and then layer 2 pounds of sliced ham next and lastly layer 2 pounds of sliced red onions. Roll the meat mixture up into a roll and then place the roll in the center of the baking dish. Bake the meat roll for 1 hour and 25 minutes – do not exceed thi…

Nick's Little Stackable Sandwich

1 large plate 1 slice toasted bread 2 slices Cheddar cheese ½ Tbsp spicy mustard ½ Tbsp mayo 2 slices pepperoni 1 Tbsp hot mustard 2 slices pickle loaf lunch meat 2 slices spicy cheese - Habanero cheddar, Allegheny smoked jalapeno or similar cheese 2 slices turkey 1 tsp hot sauce 2 slices Gouda 1 or 2 glasses of wine
On a large plate, place 1 slice of toasted bread and then layer Cheddar cheese first and then spicy mustard and mayo. Next, layer pepperoni, hot mustard, pickle loaf and then spicy cheese. Lastly, layer turkey, hot sauce, Gouda and 1 slice of toasted bread. Your sandwich is now ready to enjoy along with 1 or 2 glasses of wine!

Mascarpone 2.566

1 tall glass ½ cup strawberries – washed and halved 1 Tbsp Mascarpone ½ cup blueberries – washed 1 Tbsp Mascarpone ½ cup chocolate chips 1 Tbsp Mascarpone ½ cup blackberries 1 Tbsp Mascarpone 1 Tbsp whipped topping 1 Tbsp chocolate syrup
In a tall glass, layer strawberries first and then Mascarpone, blueberries, Mascarpone, chocolate chips, Mascarpone and blackberries. Next, add a layer of Mascarpone on top of the blackberries and then a later of whipped topping. Lastly, top the treat with a tablespoon of chocolate syrup. Chill the treat for 10 minutes and then enjoy!!

Cool Spring Drink for Wednesday

½ cup Vodka 1 can ginger beer – chilled 4 ice cubes ½ cup lime juice 1 teaspoon sugar
In a blender, combine Vodka, ginger beer and ice cubes. Blend on “High” until creamy and then blend lime juice and sugar into the cocktail. Blend again on “High” for 1 minute. Enjoy this cocktail in a tall glass!

Limes On The Oysters Out of the Shell

1 large bowl 3 lbs oysters – cleaned, washed and chopped 6 limes – chopped 1 cup cilantro – fresh and chopped 1 tsp garlic salt 1 Tbsp black pepper ½ cup gin 1 large fancy bowl 1 box fancy crackers

In a large bowl, combine oysters, limes, cilantro and garlic salt. Toss the ingredients gently and then blend black pepper and gin into the dip. Continue tossing the oyster mixture until well blended. Next, chill the mixture for 40 minutes and then transfer the dip into a large fancy bowl. Lastly, arrange fancy crackers on top of the oyster dip. Enjoy!!

Luke's Prosecco It Is

1 large punch bowl 1 lb oranges – peeled, sliced and chilled 4 bottles Prosecco – chilled ½ lb white grapes – washed and chilled Punch glasses 2 packages Hershey kisses
In a large punch bowl, combine sliced oranges, Prosecco and white grapes and then stir the mixture slowly. Next, arrange punch glasses around the bowl. Lastly, scatter 2 packages of Hershey kisses around the glasses. This cocktail is perfect for parties, cookouts and dinners. Enjoy!!
