Let's Pretend It is Wednesday Dish

1 skillet
2 lbs bacon – regular or maple flavored
Large bowl
6 large eggs
4 cups Monterey Jack cheese
2 cups onions – chopped
2 cups green chili peppers – chopped
2 cups tomatoes – chopped
½ cup poppy seeds

In a skillet over “Medium” heat, fry 2 pounds of bacon and then drain any excess grease from the bacon. Next, in a large bowl, combine 6 large eggs, 4 cups of Monterey Jack cheese, 2 cups of onions and 2 cups of green chili peppers. Stir the ingredients thoroughly and then blend the mixture into the fried bacon. The bacon will crumble and that is OK. Saute the mixture until the ingredients are well blended. Lastly, blend 2 cups of tomatoes and ½ cup of poppy seeds into the mixture. Cook the mixture until the tomatoes are tender. Serve this big dish with toast and coffee.
