Nick's Saturday the 14th Chicken

cup olive oil

lbs chicken breast – cubed

cup Tequila

cup limes – chopped

Tbsp rosemary

cup salsa – medium or hot

In
a skillet over “High” heat, pour in 1 cup of olive oil and let
the oil heat until it starts popping. Once the oil starts popping,
reduce the heat to “Medium” and saute 3 pounds of cubed chicken
breast. Saute the chicken until it is golden brown. Next, leave the
heat on and drain any excess grease from the chicken breast. Lastly,
combine black pepper, Tequila, chopped limes and rosemary in a bowl.
Stir the ingredients thoroughly and then pour the mixture over the
chicken breast. Let the dish come to a boil and then turn off the
heat. To prepare the dish for serving, arrange 1 large bag of potato
chips onto a large platter and then pour the chicken breast dish over
the chips. This dish is great with a side of salsa served in a small
bowl and lots of beer!
