Luke's Touch of Spring Dish

1 large bowl
2 cups lemon juice
4 lbs kale – chopped
2 cups white onions – chopped
1 Tbsp olive oil
1 tsp sea salt
2 cups mayo
1 Tbsp red peppercorns
2 lbs tofu – chopped
Favorite wine
Favorite crackers

In a large bowl, combine lemon juice, kale and white onions and then stir the mixture for 2 minutes. After stirring for 2 minutes, slowly add olive oil, sea salt and mayo to the mixture. Keep stirring the ingredients until the mixture is well blended. Finally, add red peppercorns and chopped tofu to the mixture. Stir the ingredients for 3 minutes and then chill the dish for 30 minutes. This kale/tofu dish is perfect with wine and crackers.
