Nick's 360 Degree Dish
1 large baking dish
4 lbs beef tenderloin – thinly sliced
½ cup black peppercorns
1 Tbsp sea salt
½ cup rosemary – fresh and chopped
2 cups red wine
2 cups onions – chopped
2 cups chives – chopped
2 cups green onions – chopped
2 cups red bell peppers – chopped
1 large bag white cheese
2 loaves French bread – thinly sliced
2 bottles red wine
Preheat your oven to 400 degrees F and then apply a light layer of cooking spray onto a large baking dish. Next, place 4 pounds of beef tenderloin into the center of the dish and then layer black peppercorns, sea salt and rosemary evenly on top of the meat. Slowly add red wine to the side of the beef. Do not apply the wine to the top of the meat – this will rinse off the spices. Lastly, layer onions, chives, green onions and red bell peppers evenly on top the beef. Bake the dish for 40 minutes or until the meat is slightly pink in its center.
Remove the dish from your oven and drain any wine from the meat. Top the meat and veggies with 1 large bag of white cheese (favorite white cheese). Return the dish to your oven and bake until the cheese starts to brown – about 10 minutes. Remove the dish from your oven and slowly transfer the meat and veggies to a large platter. Let the meat rest for 10 minutes before cooking. Serve this dish with thinly sliced French bread and red wine. Enjoy!!
