Mable’s Little Rum Cake

cup butter, softened
1
½ cups sugar
2
½ cups cake flour
3
eggs
1
tsp vanilla
½
tsp salt
1
tsp baking powder
2
Tbsp grated orange zest
½
cup orange juice
1
cup rum
Vegetable
oil
Rum
and 2 or more shot glasses
In
a mixing bowl, blend butter and sugar first. Add flour, eggs,
vanilla, salt, baking powder, orange zest, orange juice and the cup
of rum. Batter will be runny. Oil two 8-inch cake pans; pour batter
into each. Bake at 350 degrees F. for 50 minutes. Let cake cool;
serve with rum shots.
