Infused Apricots for Wednesday

1 large plastic container with a lid 2 cups apricots – chopped 1 cup peaches – chopped 2 cups Macadamia nuts - chopped
3 cups white balsamic vinegar 1 tsp black pepper
This infused apricot dish is to die for!!
In a large plastic container, combine apricots, peaches, Macadamia nuts and white balsamic vinegar. Next, stir the ingredients for 2 minutes and then add black pepper to the dish. Stir the mixture until well blended – about 5 minutes. Lastly, place a lid on the container and refrigerate the mixture for 30 minutes. Enjoy this treat with your favorite cocktail.

Promises of Prosciutto

1 large platter 1 lb toast – cubed Favorite mustard 2 lbs Prosciutto – halved 1 lb favorite cheese – cubed 3 bottles Rose wine - chilled
I promised you Prosciutto...
On a large platter, place a pound of cubed toast in the center. Next, place a small jar of your favorite mustard next to the toast. Next, place 2 pounds of halved Prosciutto next to the jar of mustard. Lastly, place a pound of your favorite cheese next to the Prosciutto -- pair this platter with chilled Rose wine.

Luke's “The Big Cheese for Snacking”

1 large bowl 4 cups Cotija cheese 3 cups white shredded cheese 1 Tbsp lime juice 1 Tbsp hot sauce 3 cups Dijon mustard 1 cup baby kale – chopped 2 cups diced tomatoes 2 Tbsp black pepper Crackers
Are you ready for the Big Cheese?
In a large bowl, combine Cotija cheese, shredded cheese, lime juice and hot sauce. Stir the ingredients until well blended and then add Dijon mustard, baby kale, diced tomatoes and black pepper to the mixture. Stir the mixture until well blended. Chill the dip for 15 minutes and then serve with crackers.

Summer Cream Soup

1 large pot 5 cups heavy cream 1 cup carrots - chopped 1 cup parsley - chopped 3 cups spinach – chopped 1 Tbsp black pepper 1 cup walnuts – chopped 1 Tbsp turmeric – fresh and chopped 1 small package tofu - chopped
Summer is here and so is this cream-based soup for YOU!!
In a large pot over “Medium” heat, combine heavy cream, carrots, parsley, and spinach. Let the mixture come to a boil and then add black pepper, walnuts and fresh turmeric. Next, stir the ingredients until well blended and the soup is starting to bubble. Lastly, add chopped tofu to the soup and reduce your stove's heat to “Low.” Let the soup cook for 15 minutes and then turn off your stove's heat. Let the soup simmer for 5 minutes and then serve.
This soup is excellent with French bread and white wine.

Nick's Crunchy Crunch for Summer

1 large bowl 3 cups popped popcorn 1 Tbsp hot butter 2 cups walnuts – chopped 2 cups carrots – uncooked and chopped 2 cups pineapple – chopped 1 Tbsp honey 1 tsp ginger 2 cups chocolate candies – M&Ms or similar candies
Ready for some crunch?
In a large bowl, combine popcorn, hot butter, walnuts, and carrots. Stir the mixture until well blended and then add pineapple, honey, and ginger to the mixture. Stir the ingredients slowly for 2 minutes and then add chocolate candies to the mixture. Stir this crunch treat for an additional 3 minutes and then chill the mixture for 15 minutes.

Enjoy this crunchy crunch while sitting outside on your patio!

Talking Coconut...Yes!

2 cups coconut milk 1 cup Rum ½ cup blueberries – frozen ½ cup strawberries – frozen 1 pinch cinnamon Wine glasses
In a blender, combine coconut milk, Rum, blueberries, and strawberries. Blend the mixture on “Low” until well blended – about 2 minutes. Let the cocktail rest for 1 minute and then add a pinch of cinnamon to the mixture. Serve this drink in wine glasses.


Cacao Sunday

1 large pot 1 package cacao powder – organic and 16 oz. 1 tsp mint – ground 5 cups milk – organic 2 cups almonds – chopped Fancy coffee cups
In a large pot over “Low” heat, combine cacao powder, mint and milk. Stir the ingredients slowly until the mixture starts to boil. Next, add almonds and stir the mixture for 5 minutes. Lastly, turn off your stove's heat and let the drink cool for 3 minutes and then serve this chocolate treat in fancy coffee cups.
