Luke's “The Big Cheese for Snacking”

1 large bowl
4 cups Cotija cheese
3 cups white shredded cheese
1 Tbsp lime juice
1 Tbsp hot sauce
3 cups Dijon mustard
1 cup baby kale – chopped
2 cups diced tomatoes
2 Tbsp black pepper

Are you ready for the Big Cheese?

In a large bowl, combine Cotija cheese, shredded cheese, lime juice and hot sauce. Stir the ingredients until well blended and then add Dijon mustard, baby kale, diced tomatoes and black pepper to the mixture. Stir the mixture until well blended. Chill the dip for 15 minutes and then serve with crackers.
